When life gives you lemons, make limoncello.
Lemonade? When life gives us lemons - we make homemade limoncello! Last year for our anniversary, LJ bought me a meyer lemon tree. As soon as it bore enough fruit, we decided to make our favorite Italian liqueur. The fresh lemon flavor is perfect for warm weather days!

Limoncello is actually really simple. All you need is vodka, simple syrup, a mason jar, a bottle, and meyer lemons! Wanted to make a high quality batch, so opted for Grey Goose Vodka. Although, any old vodka would work!
After carefully peeling the lemon rinds, we let it soak in a vodka filled mason jar for 2 months. (recipe says a few days, but we wanted to do it the old fashion way.) Here's the end result:
Strained, sugared, & bottled. Now its chilled and ready for drinking! We used a standard swing-topped glass bottle. For the label we used chalkboard paint and a gold pen to finish it off.
I personally love limoncello mixed with Hendrick's Gin and club soda. The herb & floral notes from the gin, mixed with the refreshing lemon flavor create the perfect summertime cocktail. Ready to make your own? Let me know how it turns out!
